Chef Jason from Osteria La Buca shows how to make grilled watermelon.
4 slices of ripe watermelon, center cut into 1/2" squares.
1/4 cup castalavelatrano olives
1/8 cup capers
juice of 1 lime
1/4 cup olive oil
Pre-heat grill to the highest setting.
When the grill is white hot, sear the watermelon, making grill marks on both sides.
Pull off the grill and season immediately with salt, pepper and smoked paprika.
Toss in large bowl with olives, capers, torn basil leaves and dress
The water melon with olive oil and lemon juice.
Serve right away.
