Peninsula Executive Chef James Overbaugh’s Barbecued Pork “Ribs on the Roof,” prepared with The Peninsula Beverly Hills’ own 24-spice rub will start this Saturday and Sunday from 4-9pm and continue until September 5th. The 3-course $55 prix-fixe menu will include ‘a composed skewer’ of grilled duck sausage with charred Summer pineapple, Bard Valley dates, rocket arugula and heirloom watermelon; Free-Range chicken with grilled Portobello mushrooms and apricot barbecue sauce; grilled Alaskan halibut with fennel slaw and a raspberry-chipotle glaze. T-Bone Steaks and Maine lobster are also available.
