The Darkroom's ‘White Trash' Bar Food

Jason Travi, who directs culinary activities for Jeffrey Best at restaurants like Firefly in Studio City and Mesa in Costa Mesa, recently helped implement a “gourmet white trash bar food” menu [pdf] at The Darkroom on Melrose. Chef de cuisine Zoe Schor is at the bar on a nightly basis and is preparing a menu that includes options like hand-cut pork rinds with bourbon honey mustard and spicy aioli, poutine with bacon gravy and pepper Jack cheese, and a meat pie with braised short rib, potatoes, peas and a cream cheese crust. Travi said they’re running sticky toffee pudding for dessert and that they’ll be running daily specials in the coming weeks. [The Feast]
