Chef Jesse Tiscareno develops healthy recipes for Disneyland... and he says the secret to making healthy recipes taste good is in the herbs, "Spice it up in there with the serrano peppers, little bit of cilantro, or parsley, or basil," Tiscareno said.
One of his favorite recipes is mango salsa.
"First of all we're going to start with mango, dice them up really small. So jicama, similar to potato but really refreshing for salsa or salad, so you just slice it real thin the same size as the mango, mix it together in a bowl."
"Don't forget the red onion, then diced tomato. Then just put it in the bowl mix it into the bowl."
Then, the spices - fresh lemon juice, green chili, chopped garlic, dash of mexican oregano, and cilantro. Salt and pepper to taste.
"I don't know how chinese cilantro ended up in mexico, but we had it and it's wonderful. It's one of those wonderful things!" Tiscareno said.
The finished product -- a low fat, and tastey enhancement to grilled fish, chicken, or a wrap.

Roasted Green Tomatillo Salsa
Rancho del Zocalo
Disneyland Park
1 lb. Green Tomatillos
6-8 Serrano Chiles
4 each Japanese Dried Chiles
8 cloves Garlic
¼ cup Red or White Onion, chopped
2 cups Water
Pinch Mexican Oregano, crushed
Pinch Cumin
To Taste Sea Salt
To Taste Freshly Ground Pepper
Sprig Epazote
Procedure:
· Place tomatillos, chiles, onion and garlic in roasting pan and roast in 350° oven until slightly charred on outside – or place in skillet over medium heat on the stovetop until slightly charred.
· Place roasted vegetables in blender with water and blend to desired consistency.
· Add oregano, cumin, epazote and salt & pepper to taste.
