Broccolini with Lemon


1 lb. broccolini, ends trimmed

1 Tbsp. no trans fat margarine

1 tsp. garlic, minced

Zest of one lemon

Juice of 1/2 lemon

Sea salt and fresh black pepper



1.      In microwaveable bowl with 2 Tbsp. water, steam broccolini in microwave for 4 minutes until crisp-tender.

2.      Meanwhile, in small bowl, combine margarine, garlic, lemon zest, and lemon juice.

3.      Combine lemon mixture with broccolini and season with salt and pepper.  Serve warm.
