Weekend Dining: Basa Sole with a Rockin Cucumber Martini

What's better than fish and a refreshing Martini?

This weekend's recipe can be found at Koi Los Angeles (730 N La Cienega Blvd., 310-659-9449). Koi offers a Japanese-inspired cuisine with California accents. Executive Chef Robb Lucas shows us how to make a Basa Sole with Cajun spices and sweet soy butter with broccolini and mushrooms. Something that good deserve an even better drink and Chef Lucas gives us the perfect drink to wash it down; a Rockin' Cucumber Martini.

Basa Sole with Broccolini & Mushrooms

INGREDIENTS:

  • 1 piece of whole Sole filet
  • Broccolini
  • Mushrooms of Choice

SEASONING:

  • 1 teaspoon of Cajun Spice Powder
  • 1 teaspoon of Garlic Powder
  • 1 teaspoon of Onion Powder
  • 1 teaspoon of Salt
  • 1 teaspoon of Pepper
  • All purpose flour

SWEET SOY BUTTER SAUCE:

  • 1 ounce Sugar
  • 1 ounce of Soy Sauce
  • 1 ounce of Dashi (Vegetable fish stock)
  • 1 table spoon of Butter
  • Olive Oil


DIRECTIONS:

  1. Season the Sole by combining all the spices together and coat with the All Purpose Flour.
  2. Heat Olive Oil in pan till hot. Place the Sole filet in pan and sear on both sides. Remove from pan and continue baking in oven for approximately 5 - 7 minutes.
  3. Heat Olive Oil in pan, sautee Broccolini & Mushrooms and add some salt and pepper.
  4. Sauce - Combine the Soy Sauce, Dashi and Sugar and heat in a pan. Once that's heated, add tablespoon of butter and reduce heat to medium. Wait until sauce reduces to a glaze.
  5. Pour Sauce over Sole and serve!

How to make the Rockin' Cucumber Martini

INGREDIENTS:

  • Sake
  • Vodka
  • Cucumbers
  • Splash of Lime Juice
  • Splash of Simple Syrup

DIRECTIONS:

  1. Start with ice in the shaker
  2. Add 2oz of Rock Sake
  3. Add 1oz of Vodka
  4. Splash of Lime Juice
  5. Splash of Simple Syrup
  6. Add Cucumbers
  7. Shake hard and strain with strainer in to Martini Glass Garnish with Cucumber Wheel.
