Weekend Dining: Green Tea Soba Noodles



    Be the Toast of the Breeders’ Cup

    Makes 4 servings.

    1/4 lb of Broccolini
    1/4 lb of zucchini
    1/4 lb of asparagus
    1/4 lb of green beans
    2 cloves of garlic
    1/8 lb of shiitake mushrooms
1/8 lb of Oyster mushrooms
    1 bunch of green onions
1 lb green tea soba noodles
    3-4 tablespoons of butter
1 tablespoon of Oyster sauce
Sesame seeds

    Slice and blanche the Broccolini, the zucchini and the asparagus. Set aside.

    Boil the Green tea soba for 5 minutes, then rinse in cold water to cool.
In a frying pan brown the butter, add the minced garlic.
After a few minutes add the shiitake and oyster mushrooms, then add the blanched vegetables.
Sauté the vegetables until warm then add the green tea soba noodles.
Mix everything well, then add the oyster sauce.
Place the noodles on a plate and garnish with chopped green onion and sesame seeds.

    Optional: add halved cherry tomatoes and thinly sliced cucumbers on top

    Optional: toss in sautéed chicken or shrimp with the oyster sauce
