**Kinilaw (Marinated Tuna) Recipe**
-Ingredients
6oz yellowfin tuna large dice
2oz sliced cucumber
2oz red onions
Calamansi marinade
Cilantro leaves
Sea Salt to taste
Black watercress leaves as desired
Rice paper
Furikake
*Calamansi marinade
1/4 cup calamansi juice
1/4 cup coconut milk
2 tablespoons ginger grated
2 tablespoons yellow onion grated
Thai bird chiles finely chopped as desired
1 tablespoon fish sauce
-Preparation
-*Calamansi Marinade:
Combine all ingredients in a bowl cool and set aside
Assembly:
1. Combine marinade and dice tuna in a food safe storage container and let marinade for a minimum of 1 hour.
2. In a pot add oil and bring up to 350 deg. Fahrenheit
3. Fry rice cracker until it puffs up and season with furikake spice. Set aside
3. In a mixing bowl combine marinated tuna, cucumber, red onion, and sea salt to season. Place into serving vessel and garnish with cilantro leave and black watercress leaves.
4. Serve with cracker on side.
