**EGG SOLDIERS**
Ingredients:
2 eggs
2 slices toast
Salt and pepper to taste
**INSTRUCTIONS**
Step 1. Place eggs in a small saucepan and cover with water. Bring to a simmer over medium-high heat. Remove from heat and let stand for 2 to 3 minutes for soft-set yolks.
Step 2. Cut toast into strips.
Step 3 Transfer the eggs to egg cups or a bowl. Tap the top of each egg with a spoon to crack the upper part of the shell and remove. Season with salt and pepper. Serve with the toast “soldiers.”
**3 INGREDIENT BLUEBERRY PANCAKES**
• 1 banana
• 2 eggs
• 1 Tbsp blueberries
• ½ tsp coconut oil (or butter) for frying
**INSTRUCTIONS**
• Mash up bananas in a large bowl.
• Whisk eggs (using a fork is just fine!) and add to banana paste.
• Fry gently in a pan on low-medium heat with a little heated oil or butter.
• Flip halfway through cooking (about 4 mins) with a large spatula.
**HARD BOILED EGGS**
• Place eggs in a medium pot and cover with cold water by 1 inch. Bring to a boil, then cover the pot and turn the heat off. Let the eggs cook, covered, for 9 to 12 minutes.
• Transfer the eggs to a bowl of ice water and chill for 14 minutes. This makes the eggs easier to peel. Peel and enjoy!
