BERRY HAPPY SUMMER SOUP 3.5 cups grape tomatoes 3 cups strawberries ½ red bell pepper 3 tbsp olive oil ¼ cup raw cashews 1 cup basil leaves 1 cup mint leaves 2 dates 1 tsp kosher salt Combine all ingredients in your blender and run at high speed for 30 seconds Chill several hours or overnight to allow the flavors to blend. Serve Chilled, Bon Appétit!
