Carmel Valley’s Folktale Winery is experimenting with something big in the wine world. They are the first winery in the area to debut an underwater wine aging project, with 300 bottles of Sangiovese that spent four months in the freezing Monterey Bay. “California Live” meets Folktale’s winemaker to hear about the underwater wine aging project.
