The Montage Restaurants: Parq, Muse This Month

While we've been so focused on The Bazaar at SLS Hotel opening—or, non opening—we almost forgot about the other new hotel restaurants on the horizon for Beverly Hills, those at the Montage. According to the hotel operator, the hotel and all of its dining options are slated to open on Monday, November 17, which means they must be knee-deep in previews as we speak. Here's what we know about the restaurants thus far: on the ground-floor, Parq will feature contemporary American cuisine with indoor and outdoor seating; Muse is the formal, 44-seat dining room; there's also a chef's table overlooking the gardens, a rooftop poolside cafe, and a lobby lounge. John Cuevas is executive chef for the restaurants---he was previously chef de cuisine at The Loft at the Montage in Laguna Beach, and helped open Studio before that. Because it's the Montage, we expect lots of refinement, special occasions, European tourists. And this is all before Keller opens Bouchon next door (unfortunately that's not until late 2009).
