Chef Noriyuki Sugie of Breadbar and the popular 'Hatchi Truck Stop' series has just introduced the 'Ramen Bull' series which will feature nose-to-tail ramen until September 30. Chef Nori hails from Japan but is French-trained so expect bone marrow and beef—short rib, oxtail and tongue during the Bull series— in his bowls.
